泰式猪肉沙爹 ~ Thai Pork satay ( Moo satay )




 
泰式猪肉沙爹
 
材料:
去骨猪肉里脊  500g ( 切成 10cm  x  3cm 1/4寸厚 )

腌料
椰浆    50ml
       100g
咖喱粉 10g
淡奶     40ml
鱼露     1汤匙

竹签  50 ~ 60 洗干净,浸在水里30分钟)

 
做法
1.腌料 :混合糖,咖喱粉,鱼露和淡奶。备用。

2.煮滚椰浆,趁热倒入(1)。搅拌均匀至糖溶。

3.加入猪肉,放在冰箱腌三小时。

4.预热烤箱200度,烤至熟。大概 20 ~ 30分钟。

Boneless pork loin  500g ( cut into 10cm x 3cm wide , ‘1/4 inch thick strips )

 
Marinade :
Coconut milk   50ml
Sugar    100g
Curry powder  10g
Evaporated milk  40ml
Fish sauce   1 tablespoon

 
Method :
1. For marinade : mix sugar , curry powder , fish sauce and evaporated milk . Set aside .

2. Put the coconut milk in a small pan , bring to boil . Pour the boiled coconut milk ( while still hot ) into the curry mixture , whisk until combine and sugar dissolve .

3. Toss pork strips with marinade , cover with cling film and refrigerate for 3 hours .

4. Grill at 200c for 20 ~ 30 minutes or until cook .
