越式鱼露 ~ Vietnamese dipping fish sauce (Nước mắm)

越式鱼露 (Nước mm)
材料:


鱼露     1 ( 约 100 ml )
清水     3 ( 约 300 ml)
白砂糖  1   (即是盛鱼露的容器多大,便盛多少糖)
辣椒     隨意 
蒜茸     1 汤匙
青檸   2    (酸味自行调整,买不到青檸,檸檬也行,香味稍遜)
 
做法:
1. 青檸檬榨汁备用。
2. 在鍋子里倒入鱼露、砂糖、清水煮溶,试味,水滾即离火放涼,大火煮会使鱼露变味﹗
3. 放涼後才加入已切碎的、辣椒碎及檸檬汁,如怕吃酸,加檸檬汁的時候最好逐渐加少少试味﹗
 
★★ 配好的鱼露可放入清洁的玻璃樽雪櫃冷藏,可存放约1星期
 
 

Vietnamese dipping fish sauce (Nước mm)
 Ingredient :
Fish sauce   1 cup ( about 100ml )
Water         3 cups ( about 300ml )
Sugar          1 cup  
Chopped fresh chilis       ( optional )
Garlic      1 tablespoon ( finely chopped )
Lime / lemon       2 pieces
 
Method :
1. Lemon or lime  squeeze out juice , set aside .
2. In a pot add in fish sauce , sugar and water . Cook until sugar dissolve . When the mixture has start boiling , turn off heat and let it cool . ( always low heat coz high heat will cause the fish sauce taste bad ! )
3.  Add in chopped garlic , chopped chilis and lemon / lime  juice  into the fish sauce . Adjust to taste .
 
★★ Keep in a clean glass bottle and refrigerate . It can be stored for about 1 week .
