腊肠芋头排骨 ~ Braised Spare ribs with chinese sausage & yam




 

腊肠芋头排骨
 
材料:
芋头 300g , 切厚片
蒜茸 1/2大匙
虾米 2大匙,浸淡
腊肠 1对,切片
排骨 500g , 斩块
炸油  3

调味料:
蚝油 1大匙
生抽  1/2大匙
  1/2大匙
1/2小匙
绍兴酒 1大匙
少许麻油和胡椒粉
800ml

 
做法:

1.烧热油,放入芋头炸至金黄色,捞起沥干油分,备用。

2.留1大匙油爆香蒜茸和虾米,加入腊肠和排骨炒香,再加入调味料煮滚,转小火焖30分钟。

3.加入芋头继续焖15分钟即可上桌享用。
 


 

Braised Spare ribs with chinese sausage & yam

Ingredients :
Yam 300g , cut into thick slices
Chopped garlic  1/2 tablespoon
Dried prawns  2 tablespoon , soaked
1 pair chinese sausage , sliced
Spare ribs  500g , cut into pieces
3 cups oil for deep-frying

Seasoning :
Oyster sauce 1tbsp
Light soya sauce  1/2 tbsp
Sugar  1/2 tbsp
Salt  1/2 tbsp
Shaoxing wine 1 tbsp
Dash of sesame oil and pepper
Water 800ml

 
Method :

1. Heat up oil for deep-frying , deep-fry yam until golden brown . Dish and drain .

2. Leave 1 tbsp oil in wok , sauté chopped garlic and dried prawns until fragnant . Add in sausage , spare ribs and stir-fry until aromatic . Add in seasoning and bring to boil. Lower the heat and simmer for 30minutes .

3. Add in yam and simmer for another 15minutes . Dish up and serve  .
