焗臭豆虾 ~ Baked Petai & Prawns

         


 
 
 
食谱取自 美味风采 @74

焗臭豆虾

材料:
食油  4汤匙
大葱  1 (切片)
中虾 200g (去壳留尾)
臭豆 150g
亚叁膏 30g 100清水)


香料( 捣烂 ):
红辣椒4
辣椒干条(浸软)
小葱头 10
蒜头 1
巴拉煎   1/2茶匙
白糖  1茶匙或适量

铝箔纸 2 12 x 18
香蕉叶2片( 洗净

 
做法
1.起锅热油,把香料以小火炒至香。

2.取出香料,把亚三水倒入调味。

3.撕一大张铝箔纸,放在桌面。铺上一层香蕉叶,然后放入少许大葱,臭豆和虾。做成两份.
                 


4.最后淋上炒过的香辣料,然后把铝箔纸包起。

5.放入预热至180c的烤炉,焗15分钟至虾熟。配白翻或面包吃。

 Baked Petai & Prawns

Ingredients :
4tbsp cooking oil
1 big onion  ( peeled and sliced )
200g medium sized prawns ( shelled with tail intact )
150g peeled petai
30g tamarind paste ( + 100ml water )

 
Spice paste ( finely ground ) :
4 fresh chillies
4 stalks dried chillies ( soaked )
1 clove garlic
10 shallots
1/2tsp belacan
1tsp sugar

 
2 sheets aluminium foil ( 12 x 18 inch )
banana leaves  2pcs ( washed )

 
Method :
1 . Heat oil in a wok over medium to low heat , sauté spice paste until fragrant . ( pic 1 )

2. Remove spice paste from heat & mix in tamarind juice .

3. Tear a large piece of foil & place onto a clean worktop . Top with banana leaves , place some onions then some petai & prawns . Make into 2 parcels.

4. Top with spice paste mixture & wrap up with aluminium foil securely .

5. Place into a pre-heated oven @ 180c for 15minutes or until prawns are cooked . Serve with white rice or toasted bread .
